
Ingredients
12 Large Green Apples (Granny Smith’s)
1 Cup Butter
3 Cups Brown Sugar
1 (14oz) Can of Sweetened Condensed Milk
1 Teaspoon Vanilla
1 Cup Light Corn Syrup
+ Wash and dry apples. Place apples on a parchment paper, allowing room so apples will not touch. Place popsicle sticks in apple cores.
+ Melt 1 Cup Butter over low heat in medium sauce pan.
+Add sugar, corn syrup and condensed milk. Mix well.
+ Cook and stir (scraping bottom and side) constantly over medium high heat till boiling.
+ Once boiling, reduce heat to medium, keeping a low boil. Using a candy thermometer, cook to soft ball stage (235-240 degrees).
+ Remove from heat and stir in Vanilla.
+Let caramel sit for about 5 minutes to cool.
+ Dip each apple in caramel. I find it’s easier to swirl the apple in caramel on it’s side.
+Allow to cool. I like to let them cool then place them in the fridge overnight and then add melted chocolate and other toppings the next day.
